  • High-acid cheeses such as goats’ or sheeps’ cheese e.g. crottin de Chavignol, pecorino. Lightly smoked cheese
  • Calamari, cerviche. Delicate white fish e.g. sole. Fried with chips, kedgeree, mackerel, shellfish, smoked trout
